Meal 1 ~

Berry Pecan Grilled Chicken Salad

Spring greens, grilled chicken breast, goat cheese and poppyseed truffles, red onions, candied pecans, fresh strawberries, dried blueberries, homemade black pepper croutons, and a sweet and tangy raspberry orange vinaigrette (can be made vegetarian)

Sweet Corn & Cauliflower Chowder

A light yet creamy puree of roasted garlic, herbs, and cream with chunks of roasted cauliflower and fresh-off-the-cob sweet corn

Spinach Artichoke Quesadillas

Fresh spinach, marinated artichokes, roasted red peppers, creamy béchamel, and fontina cheese melted together in a crispy flour tortilla, served with lemon sour cream



Meal 2 ~

Pork Osso Bucco

Slow-braised, melt-in-your mouth pork roast stewed with tomatoes, mirepoix, red wine, fresh herbs, garlic, and topped with a garlicky lemon parsley gremolata (substitute portobello mushrooms for vegetarian)

Bacon & Gorgonzola Polenta

Creamy, nutty polenta with salty gorgonzola and bits of crispy bacon (can be made vegetarian)

Honey Mustard Glazed Asparagus with Fried Shallots

Tender crisp asparagus tossed with a Dijon mustard and honey glaze and sprinkled with crispy fried shallots



Pizza ~

Roasted Red Pepper & Pistachio

Béchamel sauce topped with fresh spinach, roasted red peppers, toasted pistachios, and fontina and white cheddar cheeses
