Meal 1 ~

Lemon Basil Chicken Bruschetta

Thinly sliced chicken cutlets lightly breaded in parmesan, lemon zest, and black pepper, smothered in melted mozzarella cheese, then topped after baking with a bright cherry tomato and fresh basil salad and finished with a drizzle of balsamic vinegar (substitute cauliflower steaks for vegetarian)

Parsley Butter Baby Potatoes

Whole, roasted baby red and yellow potatoes tossed in parsley and garlic butter

Sautéed Peas with Prosciutto

Fresh green peas sautéed with thinly sliced shallots and bits of salty prosciutto




Meal 2 ~

Cilantro Chimichurri and Barbacoa Flautas

Shredded, lime barbacoa beef and melty chihuahua cheese rolled into a crispy baked flour tortilla, then topped with a zesty cilantro chimichurri sauce, freshly made pico de gallo, and chipotle sour cream

Smoky Tomato Rice

Toasted jasmine rice steamed with tomatoes, fire-roasted poblanos, and smoked paprika

Mojo Black Beans

Saucy baked black beans spiced with chili, lime, orange and cumin



Pizza ~

Roasted Shallot, Bacon, & Gouda

Sweet and caramel-y roasted shallots, crispy bacon, and gouda, along with parmesan and mozzarella cheeses
