Chicken & Parmesan Eggplant Rollatini

Slices of roasted eggplant rolled up with marinated, shredded chicken (optional), parmesan, and mozzarella, then topped with a homemade, lightly spicy tomato sauce, sprinkled with more parmesan cheese, and baked until bubbly

Roasted Garlic & White Bean Hummus with Pita

Creamy, flavorful roasted garlic and cannellini bean hummus topped with sun-dried tomato oil and toasted pine nuts, served with homemade pita triangles for dipping

Mediterranean Couscous

Fluffy golden couscous packed with fresh spinach, kalamata olives, lemon zest, crispy garlic, feta cheese, and grape tomatoes



Meal 2 ~

Beef & Brie Brioche Sliders

Homemade poppyseed topped brioche rolls filled with thinly sliced sirloin tip roast beef (substitute portobellos for vegetarian), thick slices of brie, red wine caramelized onions, fresh spinach, and plum mustard and baked until hot and melty

Salt & Vinegar Potatoes with Scallion Sour Cream

Crispy chunks of yellow potato roasted with garlic oil and sea salt and dashed with white wine vinegar, served with a tangy scallion sour cream for topping or dipping

Lemon Browned Butter Peas

Fresh peas sautéed in browned butter with shallots and lemon zest



Pizza ~

Fig, Brie, & Arugula

A mustard aioli base topped with slices of brie, dollops of fig jam, crispy garlic, and mozzarella cheese, then topped after baking with fresh, peppery arugula
