Lean pork loin wrapped in bacon and slow-roasted, then sliced into medallions, topped with a savory apple and cornbread dressing, and drizzled in a cider bourbon pan sauce (substitute stuffed mushrooms for vegetarian)

Maple Dijon Green Beans

French green beans roasted with shallots and then tossed in a maple and Dijon mustard glaze

Garlic Roasted Parsley Potatoes

Tiny, tri-color potatoes roasted in garlic butter and tossed in fresh parsley


Meal 2 ~

Falafel Flatbread Wraps

Homemade oven-baked falafel wrapped in warm, freshly-made flatbreads with the following toppings:

Fresh Cucumber & Onion Pickles | Sliced Tomato | Baba Ganoush

Shredded Romaine | Feta Cheese | Creamy Za’atar Dressing

Avgolemono

A light, slightly creamy Greek chicken and rice soup full of savory vegetables, tender chunks of chicken breast, and long grain white rice in a silky lemon broth with chopped fresh spinach and a touch of dill (can be made vegetarian)


Pizza ~

Pepperoni, Gorgonzola, & Olive

Red pesto base with pepperoni (optional), crumbled gorgonzola, mixed olives, and mozzarella and parmesan cheeses
