Roasted Vegetables with Balsamic Butter

A colorful and hearty mix of vegetables roasted in garlic oil and then tossed in a tangy balsamic compound butter




Meal 2 ~

Buffalo Chicken Enchiladas

Shredded chicken in a homemade buffalo sauce wrapped in a flour tortilla and smothered in a blue cheese ranch enchilada sauce and white and yellow cheddar cheeses (substitute black bean for vegetarian)

Cilantro & Jalapeño Refried White Beans

Creamy white beans refried with onions, garlic, and jalapeños and a touch of fresh cilantro

Sweet Corn & Tomato Salad

A marinated salad of cherry tomatoes, fresh sweet corn, scallions, celery, fresh herbs, and cotija cheese



Pizza ~

Basil Pesto, Roasted Vegetable, & Ricotta

A base of homemade basil pesto with a mix of roasted vegetables, seasoned ricotta cheese, and mozzarella and parmesan cheeses
