Meal 1 ~

Charred Vegetable Ragù with Meatballs

Homemade meatballs or ricotta cheese balls simmered in a thick, flavor-packed sauce of charred vegetables and crushed fire roasted tomatoes

Brown Butter & Sweet Corn Polenta

Creamy corn grits with fresh sweet corn, parmesan cheese, and browned butter

Cornbread Manchego Panzanella Salad

Crisp romaine tossed with cherry tomatoes, cucumbers, red onion, fresh basil, kalamata olives, homemade cornbread croutons, and shredded manchego cheese, served with a red wine and Dijon mustard vinaigrette



Meal 2 ~

Braised Beef or Mushroom Hand Pies

Whole wheat shortcrust pastry filled with slow-braised beef or sautéed mushrooms, and robust Emmentaler Swiss cheese, served with a horseradish and garlic aioli

Loaded Baked Potato Gratin

Whipped potatoes loaded with sour cream and white cheddar, then topped with a chive, bacon (optional), and “everything” seasoning crumble


Sautéed Peas & Pearl Onions

Fresh sweet peas sautéed with butter, shallots, and sweet pearl onions



Pizza

Sun-dried Tomato, Goat Cheese, & Basil

A base of sun-dried tomato pesto topped with fresh basil, spinach, more sun-dried tomatoes, crumbled goat cheese, finely chopped red onion, and fresh herbed breadcrumbs
