Meal 1 ~


Italian Beef & Pepper Stromboli

A twisted pastry filled with thinly sliced marinated sirloin, sautéed peppers and onions, fresh spinach, and smoked gouda and provolone cheeses (can be made vegetarian)

Saucy Stovetop Mozzarella Mac

A super creamy stovetop-style macaroni and cheese made with mozzarella cheese and tiny shell pasta

Sun-Dried Tomato Roasted Green Beans

French green beans roasted with garlic and olive oil-cured sun-dried tomatoes



Meal 2 ~

Maryland Style Salmon Cakes

Huge lumps of fresh salmon baked into a tender cake with homemade breadcrumbs, fresh fennel, parmesan cheese, and fresh herbs, served with lemon wedges and a citrus Dijon dipping sauce (can be made vegetarian)

Raspberry Pistachio Goat Cheese Salad

Spinach and spring greens topped with goat cheese truffles, sugared pistachios, red bell pepper, red onions, and a raspberry shallot vinaigrette

Wild Rice, Mushroom, & Leek Pilaf

A seasoned Minnesota wild rice blend with fresh and dried wild mushrooms and butter melted leeks



Pizza ~

Red, White, & Bleu

Marinara, salami (optional), sun-dried tomato, fresh mozzarella, and blue cheese, with liberty and justice for all
