Meal 1 ~

Charcuterie or Roasted Vegetable Paninis

A combination of coppa, salami, and speck, or garlic roasted veggies on toasted bread with thinly sliced red onions, roasted red pepper aioli, provolone cheese, and a side of homemade sweet and sour pickles


Tuscan Kale, Sausage, & Gnocchi Soup

A deeply flavorful tomato broth with zesty Italian sausage (optional), chopped kale, mini gnocchi, fragrant herbs, and lots of chunky vegetables


Warm Red Potato & Charred Pepper Salad

Roasted red potatoes and charred red bell peppers in a garlicky parsley pistou vinaigrette



Meal 2 ~

Honey Lime Chicken or Tofu Fajita Salad

Sliced blackened chicken or tofu on crisp romaine with freshly made pico de gallo, sautéed bell peppers and red onions, shredded cheddar, crunchy fried tortilla strips, and a honey, lime, and cilantro vinaigrette


White Bean & Turkey or Vegetable Chili

A hearty and creamy stew of ground turkey or mixed vegetables, white beans, sweet onions, green chiles, and warm Mexican spices


Cowboy Caviar Quesadillas

A blend of black beans, bell peppers, and sweet corn with white cheddar cheese in a toasted flour tortilla, topped with lime sour cream



Pizza

Chicken Bacon Ranch

Blackened chicken with homemade buttermilk ranch dressing, crispy bacon, and white cheddar and parmesan cheeses
