Meal 1 ~

Sicilian Sausage & Tomato Alfredo Lasagne Rolls

Homemade fennel Sicilian sausage (optional), fresh spinach, and herbed ricotta stuffed into lasagne rolls smothered in a creamy tomato Alfredo sauce and topped with mozzarella and Romano cheeses


Kale Caesar Salad

A mix of crisp kale and romaine lettuce with grated parmesan cheese, black pepper and garlic oil croutons, and a creamy, homemade Caesar dressing


Garlic & Parmesan Pinwheel Rolls

Buttery, garlicky rolls spiraled with herbs and parmesan cheese



Meal 2 ~

Chorizo, Jack, & Potato Empanadas

Fresh chorizo or soyrizo with fried potatoes and jack cheese baked in a whole wheat hand-pie, served with a cilantro lime avocado dipping sauce


Smoked Tomato Rice & Red Beans

Butter-toasted long grain rice and red beans cooked in a smoky tomato broth scented with smoked paprika, garlic, and scallions


Sweet Corn, Bacon, & Roasted Poblano Chowder

A chunky, creamy chowder of hominy, fresh sweet corn, fire-roasted poblanos, and applewood smoked bacon (optional)



Pizza

Spinach, Artichoke, & Tomato Alfredo

Choice of sausage, chicken, or sun-dried tomato with fresh spinach, marinated artichokes and tomato Alfredo sauce, with mozzarella and smoked provolone cheeses
