Meal One ~

Butternut Squash & Sage Lasagne

Roasted butternut squash, caramelized onions, herbed ricotta cheese, spinach, and sage sausage (optional) layered with noodles, creamy béchamel, and gruyere cheese, topped with a sage and parmesan crumble

Harvest Apple, Walnut, & Gorgonzola Salad

Mixed greens topped with fresh Granny Smith apple, toasted walnuts, crispy bacon (optional), red onion, dried cherries, and tangy gorgonzola cheese, served with an apple cider poppyseed vinaigrette

Honey Balsamic Roasted Carrots

Whole carrots roasted with local honey, balsamic vinegar, and fresh thyme


Meal Two ~

French Country Chicken or Lentil Stew

Fall-off-the-bone braised chicken or lentils slow-simmered in white wine with fresh herbs, carrots, onions, fennel, and celery with a touch of garlic and Dijon

Potato, Parsnip, & Leek Colcannon

A rustic mash of Yukon gold potatoes, roasted parsnips, and butter-melted leeks


Homemade Artisan Bread with Herbes de Provence Butter

A crusty on the outside and tender on the inside loaf of homemade bread, served with fragrant Herbes de Provence compound butter


Pizza

Sausage, Potato, & Rosemary

Paper-thin sliced red potatoes, savory sage sausage (optional), roasted red onions, and fresh rosemary with mozzarella, gruyere, and parmesan cheeses
