Meal One ~

Sun-dried Tomato & Feta Meatballs & Asparagus

Meatballs with your choice of turkey or brown rice, filled with sun-dried tomatoes, basil, and feta, tossed with sautéed asparagus and topped with a creamy tomato feta sauce


Brown Butter & Roasted Garlic Smashed Potatoes

A rustic mash of red potatoes with roasted garlic and browned butter


Red Pepper, Walnut, & Goat Cheese Salad

Spinach and spring greens topped with crunchy red bell peppers, red onions, toasted black pepper walnuts, and crumbled goat cheese, served with a tangy balsamic vinaigrette


Meal Two ~

Spinach & Portobello Enchiladas Verde

Your choice of slow-braised carnitas or black beans with sautéed spinach, portobello mushrooms, and shallots wrapped in a flour tortilla and topped with a fire-roasted poblano cream sauce and white cheddar cheese


Cilantro, Lime, & Roasted Corn Rice

White rice seasoned with finely chopped cilantro (can substitute parsley), garlic, and lime zest, studded with roasted sweet corn


Honey Chipotle Cornbread

Lightly spicy and smoky sweet cornbread baked in a cast-iron skillet, served with cinnamon honey butter


Pizza

Italian Sausage, Pepper, & Pesto

Sweet Italian sausage (optional), roasted bell peppers, red onion, and garlic with basil pesto sauce, mozzarella, parmesan, and white cheddar cheeses
