Meal 1 ~

Tacos Al Pastor

Charred and thinly shaved pork tenderloin (can be made vegetarian) that has been marinated with fresh pineapple and spices, served on flour tortillas with the following:

Sautéed Onions | Grilled Pineapple Salsa | Guacamole | Cilantro Cream

Cheddar Barbecue Baked Black Beans

Lightly mashed black beans in a homemade tomato barbecue sauce, topped with sharp cheddar cheese, everything seasoning, and sliced fresh jalapeño


Meal 2 ~

Sun-Dried Tomato & Florentine Lasagne

Fresh spinach with freshly homemade lemon ricotta cheese layered between pasta noodles along with sun-dried tomatoes, mozzarella, parmesan, and topped with goat cheese and fresh basil

Tomato Cucumber Panzanella Salad

Chopped romaine tossed with cherry tomatoes, sliced baby cucumbers, red onions, and homemade garlic croutons and topped with a lemon, garlic, and white balsamic vinaigrette

Roasted Cauliflower & Leek Bisque

A deceptively creamy, yet light and flavorful bisque of pureed roasted cauliflower, melted leeks, garlic, and a touch of cream

Barbecue, Bacon, Pineapple, & Jalapeño

One of my all-time faves! Homemade barbecue sauce topped with cheddar and mozzarella cheeses, crispy bacon, sweet pineapple, and spicy jalapeño
