Meal 1 ~

Rosemary Pork Tenderloin with Fig & Balsamic Sauce

Marinated pork loin crusted in rosemary and warm spices, sliced into tender medallions and then drizzled with a fig jam and balsamic reduction (substitute portobello mushrooms for vegetarian)

Parmesan & Herb Roasted Red Potatoes

Red potatoes roasted until crispy in garlic butter with parmesan and fresh herbs, then lightly dashed with champagne vinegar

Maple Browned Butter Roasted Brussels

Fresh brussels roasted in browned butter and tossed lightly with maple syrup, currants, roasted pistachios, and gorgonzola cheese



Meal 2 ~

Honey & Soy Glazed Chicken Skewers with Basil Lime Yogurt

Thinly sliced marinated chicken, skewered and glazed with honey and dark soy sauce, served with a tangy, creamy basil lime yogurt dipping sauce (substitute mixed vegetables for vegetarian)

Miso Peanut Noodles

Whole wheat noodles with spiralized carrots and zucchini tossed in a garlicky peanut and miso sauce…delicious hot or cold!

Ginger & Sesame Green Beans

Fresh green beans sautéed until tender crisp with fresh ginger, garlic, and sesame oil, then tossed with black and white sesame seeds


Pizza ~

Mediterranean Pizza

A garlic and olive oil base topped with fresh mozzarella, fresh spinach, red onion, olives, grilled artichoke hearts, diced tomato, and feta cheese, then drizzled with balsamic glaze
